La Pasta di Alfieri is where it all began. Drawing on ancient recipes from the Langhe and Roero regions of Piedmont, this is the collection that defines the Alfieri identity — pasta made the way it has always been made in this part of Italy, with quality ingredients, careful technique, and an unwillingness to compromise on the result.
To protect the flavour and nutritional integrity of every ingredient, Alfieri developed a special cold-rolling technology that, unlike conventional drawing methods, fully preserves what makes the pasta exceptional. Drying takes place slowly in a steam oven, recreating the patience of the traditional process. The result is pasta that tastes as it should: honest, nourishing, and deeply rooted in one of Italy's most celebrated culinary regions.
