Our Classics collection draws on ancient pasta-making traditions from the Langhe and Roero regions of Piedmont — a part of Italy where food is taken seriously and shortcuts are not tolerated. These are the shapes and recipes that have been passed down through generations, refined over time, and trusted at the table for as long as anyone can remember.
To honour that heritage without compromise, Alfieri developed a special cold-rolling technology that, unlike conventional drawing methods, fully preserves the pasta's flavours and nutritional properties. Drying takes place slowly in a steam oven, recreating the unhurried pace of the old courtyard tradition — when pasta was laid out in the sun and left to dry in its own time. The result is a collection of pastas that taste as they always should have: honest, nourishing, and deeply satisfying.
